WHere is a simplified version of a drink from our latest menu. It's a large-volume premix that's packed with tastes of a festive period, which makes it ideal for hosting a festive gathering. Save the extra citrus syrup to use in morning drinks, puddings, or for additional servings of bikinis.
The Bikini Cocktail
Makes enough for 10 guests
To make the Clementine Syrup (makes 750ml)
300ml recently pressed clementine juice
200ml newly squeezed lemon juice
500g caster sugar
For the Drink (makes 850ml, to serve 10)
400ml good quality vodka
100ml dry gin
150ml peach-flavored liqueur
200ml citrus syrup (see above)
Fresh cranberries, to garnish
Mandarin essential oil, to finish
Instructions
Making the Cordial: Combine all the items into a saucepan, bring to a simmer, mixing to dissolve. Next, take off the stove allowing it to cool entirely. Pour into a sterilised bottle, close it and store in the refrigerator, it can be stored for around one month.
For the Batch Mix: Mix every liquids in a large bottle, allow it to infuse for one hour, then strain , ideally through muslin, so it's fully clarified.
When ready to serve: Add 85ml of your cocktail base to a cocktail shaker packed with ice, and agitate carefully for about 60 seconds to cool it down. Strain to a chilled martini glass or similar, top with the cranberries and complete it by giving it a brief mist with the mandarin essence above the glass.
